Known for a clean, fragrant taste with moderate bitter and pungent notes, Aceite de Jaén is obtained from olives exclusively by mechanical means, and stems from a tradition of olive oil production in Jaén dating to at least Roman times.

Olive oil production today plays an important economic and socio-cultural role in the province, with olive plantations accounting for nearly 90% of cultivated land and most municipalities in Jaén having at least one olive mill.
